I’ve been staring at those already roasted carrots in the fridge from a day ago, knowing I need to eat them soon. But they needed a transformation, one that could warm my heart and belly at the same time. Time to research what’s in the fridge:

1 bag roasted carrots (Season with oil, paprika, cumin, S&P)

Organic chicken broth or stock

Greek yogurt (approx 1/4 c.)

Oelek Sambal (spicy Southeast Asian Chili Sauce)

Ginger Paste

S&P as needed

Mix all ingredients to taste and consistency in your Vitamix to achieve a smooth creamy, spicy carrot soup. Heat individual servings. Be sure not to overheat or yogurt can curdle.
