Spinach Leaves (Don’t like stems… check out this blog)

Cooked Quinoa (cooled in the freezer for 15 minutes until room temp)

Sliced Avocado 

Grilled shrimp

Citrus Dressing

 

My citrus dressing includes fresh grapefruit juice, lemon juice, Dijon, Sesame oil, and S&P. All ingredients are to taste. Try a few different combinations!

Add a generous amount of spinach leaves to each individual bowl.

Cover with up to a full cup of cold or room temp cooked quinoa.

Add ¬Ĺ sliced avocado on to each salad

Add grilled shrimp (optional)

Drizzle Citrus Dressing generously over salad to cover quinoa
